EGG LESS FRUIT CAKE

For the first time I baked frosting cake, for my hubby’s Birthday. I’m very glad that it came out so very well. I baked it without any hassle. The best part is …everybody liked it. So sharing the same with you all happily .

       

       Ingredients :

  • Plain flour – 1 cup
  • Sugar – ¼ cup
  • White butter – ½ cup
  • Whole milk – ¼ cup
  •  Raisins – 2 tbsp
  • Almond flakes – 2 to 4 tbs
  • Glazed cherries – 2 tbsp
  •  Honey – 1 tbsp
  • Curd – ½ cup
  • Soda-bi-carbonate – ¼ tsp
  • Baking powder – ½ tsp  

 

       For Frosting :

  •  1 cup non Diary Whipping Cream
  • 1/4 cup icing sugar

 

      PROCEDURE :

  • Preheat the oven on ‘convection’ at 180*C
  • Sieve flour, soda-bi-carbonate n baking powder in a bowl
  • Beat butter and sugar well. Add honey and curd to it and add rest of ingredients to the cake batter
  • Grease the baking dish & pour the batter into it
  • Bake at 180* C for 30–35 minutes or until a toothpick inserted comes out clean , on the lower rack.
  • Cool the cake on the wire rack for 10 mins
  • Mean while beat the whipping cream with icing sugar
  • Apply the frosting all over the cake
  • Garnish with cherries and Almond flakes
  • Refrigerate it for half an hour and it is ready to use
