UDDINA WADAY / BLACK LENTILS WADA

       Its a famous South Indian breakfast. Urad dal wada is crispy, tasty & protein rich food. It is delightful with chutney, Rasam, Sambar. In Karnataka it is a special dish for fifteen days during Paksha masa.

 

 

        Ingredients:

  • Urad dal/ Black lentils – 1 1/2 cup
  • Green chillies – 4 to 6
  • Pepper corns – 6 – 8 nos.,
  • Ginger (grated) – 1 tsp
  • chopped fresh coconut – 2 tbsp (optional)
  • Curry leaves – few
  • Salt to taste
  • Enough oil for deep frying

         For Serving:

  • Coconut chutney

PROCEDURE:

  • Clean, wash & soak the black lentils in enough water for 2 to 3 hrs
  • Drain & add green chillies, ginger,pepper corns & salt  & blend it to  a fine paste adding little (2-3 tbsp) water
  • Take out and add chopped fresh coconut and curry leaves & combine well
  • Heat oil
  • Wet you hands, take a portion of the mixture and make a hole in the centre & crop it in the oil
  • Deep fry the wada till it turns golden brown on both the sides
  • Repeat this with the remaining batter
  • Serve with chutney
