CHOLE – BHATURE (Its yeast/soda/eno free)

Today I am posting the recipe for Bhature with goodness of wheat.  It’s also equally fluffy, crisp  and with additional health benefits as here I have used wheat flour and semolina. Bhature is one of the most popular North Indian ( Punjab ) recipe. I have not used any kind of dough rising agent such as… Yeast or baking soda or Eno etc. Bhature is always paired with chole  and this combination is a hit all over India.

 

         Ingredients:

  • Wheat flour – 2 cups
  • Semolina (Fine sooji) – 1/2 cup
  • Maida – 1/2 cup
  • Curds – 1/4 cup
  • Poppy seeds (khus-khus) – 1&1/2 tbsp
  • Ghee – 1 tbsp
  • Sugar – 1/2 tsp
  • Salt to taste

 

  • Oil for deep frying
  • Warm water to knead the dough

 

        PROCEDURE :

  • Combine all the ingredients, mix well and knead into a semi stiff dough using warm water
  • Cover and keep aside for one hour
  • Knead the dough again really well and divide into equal portions
  • Heat the oil in a deep kadhai
  • Roll each portion of the dough
  • Deep fry the bhaturas  one at a time till they puff-up & turn golden brown
  • Serve immediately
