CHRISTMAS CRANBERRY DRY FRUITS CAKE

Wow!!! day by day I am acquiring more knowledge about baking. This year… for Christmas I definitely wanted to try any egg less as well as  Alcohol free cake. By chance I came across Ms. Sundari Nathan’s recipe for the same. It came out really well and its toooooo yummy. I feel fantastic now. This is…as I said earlier, egg less cake and it does not contain Alcohol. So gladly sharing the recipe with you all.

 

 

        Ingredients:

  • All purpose flour / Maida -1&1/2 cups
  • Curd – 1/2 cup
  • Baking soda – 1 tsp
  • Water – 1 cup
  • Cranberries – 1 cup
  • Raisins – 1 cup
  • Dry fruits (chopped) – 1/2 cup ( Almond, Pista, dates, Walnut )
  • Butter – 1/4 cup
  • Ginger Powder -1 tsp
  • Cinnamon Powder – 1 tsp
  • Brown Sugar – 1 cup
  • Salt – 1/2 tsp

 

        PROCEDURE:

  • Combine Water, Cranberries, Raisins, Butter, Brown sugar, ginger powder & Cinnamon Powder, start heating
  • Reduce the flame to low – medium and let it boil for 3 – 4 minutes
  • Take out from the fire and let it cool down
  • Simultaneously Pre-heat the oven at 160 degree celsius & Grease and dust the cake tin and keep aside
  • Once cooled add dry fruits, curd and mix it
  • Now add Maida, salt and baking soda… mix everything properly
  • Pour the mixture into the cake tin and bake it for 30 to 35 minutes or till tester comes out clean
  • Let it cool completely then take out from the tin & serve
