ASH GUARD (WHITE PUMPKIN ) HALWA / KASHI HALWA / DUMROT

It is called as white pumpkin, Ash guard, winter melon in English, Petha, Kashi Phal in Hindi, boodu kumbalakayi in Kannada. So Ash guard is called as Kashi Phal in Hindi, so the sweet (halwa) prepared out of it is called  Kashi halwa. But many people confuse it to the holy place Kashi, a city in Banaras      ( Varanasi). This halwa is a standard feature in wedding of Karnataka. For so many years it was a compulsary sweet during ” varapooje” in wedding. Ash guard has got 95% water content which is considered good in Hypertension patients. It also contains calcium and  it helps in weight loss also …I believe. Below is my way of making Kashi halwa.

 

 

 

         Ingredients:

  • Ash guard ( grated ) – 2 cups
  • Sugar – 3/4 to 1 cup
  • Saffron strands – few
  • Ghee – 2 tbsp + 1 tbsp
  • Cashew nuts – 2 tbsp
  • Raisins – 1 tbsp
  • Cardamom Powder – 1/4 tsp

 

          PROCEDURE:

  • Wash, peel the skin, remove seeds and grate the Ash guard
  • Soak saffron in 1 tsp warm water & keep aside
  • Pressure cook the ash guard ( 1 or 2 whistles ) and let it come to room temperature
  • Drain out excess water by pressing it lightly between your hands
  • Heat 2 tbsp ghee in a pan and add grated and cooked ash guard
  • Saute it till the water fully evaporates, then add sugar & saffron strands and combine well
  • Cook further until it becomes a single lump ( it takes 25 to 30 minutes ) by stirring frequently
  • Take out when it leaves the edges of the pan
  • Mean while heat 1 tbsp ghee and fry cashew nuts & raisins in it and pour it on the halwa
  • Add cardamom powder and serve hot
