FINGER MILLET / RAGI / NACHNI FLOUR ROTTI

Ragi / finger millet is widely used in South India. Ragi is rich in absorb-able calcium, Iron and fiber. Ragi is used in many ways ie… Ragi rotti, Ragi dosay, Ragi laddoo, Ragi porridge, Ragi malt and most popular is ” Ragi balls (mudde)”.  Here I’m sharing the recipe of Ragi rotti ( roti ) with you all

       Ingredients:

  • Ragi flour – 1 cup
  • Onion  – 1/2 cup
  • Green chillies  – 2 nos.,
  • Coriander leaves – 4 tbsp
  • Curry leaves – 2 tbsp
  • Grated fresh coconut – 1/4 cup (optional)
  • Salt to taste
  • Oil

 

         PROCEDURE:

  • Chop onion, green chilli, coriander leaves, curry leaves finely
  • Add Ragi flour, salt & coconut ( If using )
  • Combine everything well and knead into dough with water
  • Take portions of the dough and make into equal sized balls
  • Grease your fingers or moisten them by dipping in a bowl of water
  • Grease the butter paper or white paper and Place a ball of the dough and Spread it evenly
  • Put it on the heated tawa, after two minutes take out the paper slowly
  • Flip and cook as well
  • Serve hot with any chutney / curry of your choice

               NOTE : Grated carrot can also be used…..

               Rotti can be made directly on tawa also
