INDIAN GOOSEBERRY/AMLA PICKLE / BETTADA NELLIKAYI TOKKU

This Pickle is made using grated Amla and can be stored for long time. It can be eaten with Rice, roti, chapati , poori etc . I don’t use anything to add sourness to this pickle as herein Gurgaon we get the Amla which is very sour. So if amla’s are not sour then one can use Lemon juice as per taste

 

 

 

        Ingredients :

  • Grated Amla – 2 cups
  • Salt as needed
  • Red chilli powder – 1 tbsp
  • Turmeric powder – 1/2 tsp
  • Jaggery – 1 tsp

       Other Ingredients :

  • Oil – 2 tbsp Or more ( I use only this much..ie…1 tbsp for 1 cup )
  • Mustard seeds – 1 tsp
  • Asafoetida – 1/4 tsp

 

       PROCEDURE :

  • Combine all the ingredients under the heading ‘ Ingredients ‘, very well using hand and keep it aside for half an hour
  • Heat oil in a pan, add mustard seeds, when it splutter add hing and combined Amla mix
  • Saute it on medium flame till Amla becomes slightly soft and nice aroma comes
  • Transfer it to a bowl, let it cool completely, then store in a air tight container in the fridge
  • You can use it immediately too
