SWEET-CORN & VEGETABLE SOUP

A nutritious , healthy, soothing soup suitable for those rainy, chilly days. We at home like this soup & its our favourite. It has all the goodness of vegetables and sweet corn to the maximum. Apart from boiling vegetables and corn, this soup is very less time consuming, It will be ready in no time with all the easily available ingredients at home. I find it very easy to prepare and hassle free. Here is my method of making sweet corn & vegetable soup

 

 

 

        Ingredients :

Chopped vegetables

  • French beans – 1/4 cup
  • Carrot -1/4 cup
  • Cabbage – 1/4 cup

 

  • Sweet corn kernels – 1/4 cup + 1/4 cup
  • vegetable stock – 3 & 1/2 cups
  • Sweet corn paste – 1 cup
  • Ghee / butter – 1/2 tsp
  • Pepper powder – 1/2 tsp
  • Salt – 2 tsp or according to taste
  • Corn flour – 2 1/2 tbsp

 

        PROCEDURE :

  • Boil Beans, carrot, cabbage and 1/4 cup corn kernels in enough water to get 3 &1/2 cups of vegetable stock
  • Boil the other 1/4 cup of corn kernels, cool it for a while and grind it with water into a fine paste to get 1 cup of ground corn cream
  • Now in a container heat butter, add pepper powder, ground corn cream, vegetables with stock & salt…. Let it boil
  • Mean while Mix corn flour in 1/4 cup of water and add it to the boiling soup and cook till it thickens.
  • Serve hot
