MIXED VEGETABLE SUBJI / PALYA

This is one of my favourite subji’s. A simple, quick & crunchy subji which has the goodness of  varieties of vegetables.The only spice used is red chilli powder. It goes well with almost everything as in Poori, Phulka, roti, akki (rice) rotti, rasam rice, curd rice etc. It has all nutrients preserved as the vegetables are steamed first before tossing it for a while. I served this subji (palya) with Whole wheat flour-Bottle gourd rotti (roti) & Rice flour-Bottle gourd rotti (roti)

 

 

 

 

        Ingredients :

Vegetables cut length wise

  • French beans – 1/4 cup
  • Carrot – 1/4 cup
  • Baby corn – 1/4 cup
  • Broccoli – 1/4 cup
  • Ivy gourd – 1/4 cup
  • Capsicum – 1/4 cup (I have not used)
  • Onion – 1 big
  • Ghee – 2 tsp
  • Cumin seeds – 1 tsp
  • Red chilli Powder – 1/2 tsp or according to spice level
  • Turmeric Powder – 1/4 tsp
  • Salt to taste

 

       PROCEDURE : 

  • Steam all the vegetables ( do not allow it to become soft, keep it crunchy) except onion & capsicum
  • Cut onion & capsicum also length wise
  • Heat ghee , add cumin seeds… let it splutter, onion & capsicum…. fry till little soft
  • Add in steamed vegetables, add salt , turmeric powder and chilli powder
  • Combine everything well while stirring, remove from the fire
  • You can sprinkle chopped coriander leaves…. and the subji is ready to serve.
