RED PUMPKIN/KADDU RAITA ….. SIHIGUMBALAKAAYI MOSARU BAJJI

Red Pumpkin has lot of health benefits. It is high in Vitamins and Minerals, but low on calorie. Consuming fruits and vegetables of all kind, reduces many lifestyle related health issues. Red pumpkin is rich in Vitamin A, C & E, It contains minerals like Potassium, copper, Thiamin, magnesium, Phosphorus etc. It boosts up our immunity system. Good for heart, hypertension etc. It is a good source of Iron. Today I’m sharing two recipes using red pumpkin… ie…. raita & Palya (subji). Below is the recipe for making red pumpkin / kaddu raita.

 

 

 

        Ingredients :

  • Pumpkin cut into cubes – 1 cup
  • Curd – 1/2 cup or as needed
  • Salt – as per taste

 

        For tempering :

  • Oil – 1 tsp
  • Mustard seeds – 1/4 tsp
  • Bengal gram – 1 tsp
  • Black gram – 1/2 tsp
  • Red chilli – 2 (hot)   or Red chilli flakes – 1/2 tsp

 

        PROCEDURE :

  • Steam or cook Pumpkin cubes, take it in a bowl and let it cool completely

  • Mash it lightly with your hand or a masher

  • Prepare tempering using the ingredients under the heading ‘ for tempering’ and pour it over the mashed pumpkin

  • Now finally add curd and salt, combine everything well

  • Serve as an accompaniment with saaru(rasam), Huli(sambar), dal, roti, paratha etc
