PINEAPPLE SOUP

An awesome soup with warming, comforting, nourishing as well as full of medicinal properties. Winter is the time when we look forward to have such a soothing soup…rather soups are excellent for winters. It is easy to prepare and make good starter for brunch or lunch or dinner. The Pineapple which I bought this time was very much suitable for making soup because it was neither too sweet nor sour. So I have just added some easily available ingredients in the kitchen and this wonderful soup was ready within few minutes. So very gladly sharing this recipe with you all.

 

    Ingredients :

  • Water – 3 to 4 cups ( you can also use vegetable stock in place of plain water)
  • Pineapple – 4 slices
  • Coriander leaves – 1/2 cup
  • Sugar – 1 tsp  (I used honey)
  • Black pepper powder – 1/3 tsp
  • Lemon Juice – 1/4 tsp (adjust)
  • Milk – 1/4 cup
  • Ghee – 1/4 tsp
  • Salt – 1 tsp or as per taste
  • Bread slices – 1 or 2

    PROCEDURE : 

  • Gather coriander leaves, Pineapple slices, water (or vegetable stock), sugar, salt and Black pepper powder in a pan or a container and boil it for 15 to 20 minutes on slow fire
  • Remove from the fire and allow it to cool for some time, then Puree everything together in the mixer
  • Transfer it to a container and again bring it to boil, add Lemon juice and boil further for two minutes, now add ghee and remove from the fire
  • Add cold milk and transfer into soup bowls, put roasted bread cubes.
  • Yummy Pineapple soup is ready to serve
