SWEET CORN RICE / JOLADA ANNA

This is one of our most favourite one pot meal. Very tasty, healthy, yummy, flavor full rice dish made with very few ingredients. Actually personally Me & children like corn in any form, so this is one of our favourite regular rice dish at our place. It can be eaten as such, no accompaniment like raita or curry is needed. It tastes best if made using fresh Corn Kernals, Below is my method of making Corn rice

      Ingredients : 

  • Rice (raw) – 1 heaped cup
  • Sweet Corn – 1&1/2  cups
  • Green Peas – 1/2 cup (optional) (this time even I didn’t add)
  • Salt to taste

     To grind :

  • Grated fresh coconut – 1/2 cup
  • Coriander leaves – 1/2 cup
  • Curry leaves – 1 stick
  • Mint leaves – 1 fistful
  • Green chilli – 4 to 6 or as per taste
  • Ginger paste – 1 tbsp

      For tempering :

  • Ghee or Butter – 1 tbsp
  • Cumin seeds – 1/2 tbsp
  • White sesame seeds – 1 tbsp
  • Turmeric powder – 1/2 tsp
  • Hing – 1/8 tsp

     PROCEDURE :

  • You can cook rice separately and sweet corn & green peas separately
  • Or
  • You can cook everything together in a cooker
  • Next grind all the ingredients together under the heading “to grind”
  • Heat ghee or butter in a pan, put cumin seeds, sesame seeds, turmeric powder, hing and let them splutter

  • Now add ground paste and fry till raw smell goes, turn the heat to sim

  • Now add cooked rice, sweet corn, green peas and also salt, combine everything well

  • Serve sweet corn rice with any raita or as such
