CARROT CUSTARD PUDDING

Carrot pudding is a simple, yummy desert which is nutritious too. Very simple to make recipe taken from one of my old written recipe book. This is a healthy recipe for children and grown ups. I have used raw cane sugar in this but its completely your choice to use any sugar, as just there will be a slight change in the color of the desert. It can be served as both hot & cold, just you need to keep it in the refrigerator for 1 hour or so… to serve it cold.

Ingredients :

  • Ghee – 1 tsp (I have put this much, you can add as per your requirement)
  • Grated carrot – 1/2 cup
  • Sugar/raw cane sugar – 2 tbsp
  • Milk – 1/2 cup + 1 cup
  • Raisins – up to 2 tbsp
  • Custard powder – 1 tbsp

 

PROCEDURE :

  • Heat ghee in a pan, add in raisins, saute for a while, then add in grated carrot, saute till the moisture evaporates ie… for 1 or 2 minutes

  • Now add in 1/2 cup of milk, keep the flame to medium, close the lid and allow it to get cooked by stirring in between

  • Meanwhile stir custard powder in 1 cup of milk and keep it ready
  • Once the carrot is cooked, add in sugar and mix well

 

  • Now add in custard powder milk mixture and stir continuously so that it won’t form any lumps

  • Remove from the fire when the mixture becomes thick

 

  • Serve hot or cold
