APPLE ALMOND PUDDING| APPLE KHEER| SEBU BADAMI PAYASA|

A kheer / payasa with all the goodness of nut and fruit. I had soaked almonds to make some other dish , but I could not do due to some reason, so I wanted to use that soaked and peeled almond immediately… I had apple also which was very attractive in red colour, suddenly it strike my mind that… how it will be if I use both almond and apple together and try some new dish, so with a very few ingredients I tried it today… Its superbly yummy.. Now I would like to do it whenever I feel like. I made it mildly sweet, as we like any sweet that way, but you can always adjust the quantity of sugar.

Ingredients :
- Almond (soaked & peeled) – 1 cup
- Apple – 1 big
- Ghee – 1 tsp
- Raw cane sugar – 5 tbsp (adjust)
- Milk – 2&1/2 cups
- Cardamom Powder – 1/4 tsp
- Saffron strands – 1/2 tsp (reserve a little for garnishing)
PROCEDURE :
- Grind soaked & peeled 3/4 cup of almonds using 2 cups of milk, by adding little at a time along with saffron (out of 2&1/2 cups)
- Chop the remaining 1/4 cup of almond
- Grate the apple
- Heat ghee, add in chopped almonds and grated apple, saute for a minute (I kept it crunchy, if you want you can saute till it becomes soft)
- Now add in ground almond-saffron mixture and keep stirring continuously, but slowly on low medium flame
- Once it starts boiling, turn off the flame and add in sugar and combine well, then add the remaining 1/2 cups of milk and again combine everything well
- Remove from the fire and sprinkle reserved saffron strands
- Serve hot or chilled, both way it tastes yum
