INSTANT BANANA COCONUT IDLY

Do you have over ripe bananas ? don’t worry you can use it in this way ! one more kids friendly and also suitable for all age recipe which uses all the healthy ingredients. Very quick and easy to make dish. Very recently I have postedĀ Instant chocolate idly, which is also a kids friendly recipe. And sometime back IĀ had posted one more type of kid friendly recipe ie….Ā chocolate dosay/dosa. This Idly can be served as after school snack as well in the evening. The below mentioned quantity of ingredients makes 12 nos., of Idly.

Ingredients : measuring cup used – 250 ml, Serves 3
- Semolina/sooji/rave – 1/2 cup
- Banana – 2 big (3 medium)
- Grated fresh coconut – 1/4 cup
- Warm milk – 1/4 cup
- Jaggery – 1 tbsp
- Curd – 1/4 cup
- Ghee – 1 tsp
- Eno fruit salt – 1/2 tsp
- Green chilli – 1 tbsp (adjust)
- Coriander leaves – 2 tbsp
- Curry leaves – 1 string
- Salt – a pinch
- Water – about 2 tbsp or so, just to balance the consistency of the batter
PROCEDURE :
- Mix milk & curd in a bowl and beat it for a while to get it evenly mixed
- Mash the bananas in a bowl really well
- Now add in all the other ingredients and curd-milk mixture to the mashed banana and mix everything nicely without any lumps, add water (very little) to get the idly batter consistency
- Wet the idly plates and pour the batter, and steam it for 12 minutes and let it sit for 5 minutes
- Remove the idly from the mould and serve withĀ fresh coconut chutney
