WHOLE WHEAT FLOUR COOKIES…… using chocolate chunks

Posted in : BAKING RECIPES/BAKED GODDIES on by : Divya Suresh

Egg less cookies on the eve of Christmas ….with the goodness of whole wheat flour along with its bran ! yes …. I myself get the flour milled every time, so that it retains all its goodness. So anything I make at home using whole wheat flour contains lot of fiber in it. This cookie is very easy and simple to make. I have used the regular oil (saffola) which I use for cooking, but the original recipe uses coconut oil and the milk used in the original recipe is vegan , but I have used cow’s milk. I referred the recipe of “tasty vegetarian”s video, but made with modifications. The mentioned quantity of ingredients yields 13 nos., of big cookies, which are rich in flavor, crunchy from outside and soft & chewy from inside. The best & just perfect home made cookies !

Ingredients :

  • Whole wheat flour – 1&1/2 cups
  • Baking soda – 1/2 tsp
  • Raw cane sugar – 1/4 cup
  • Brown sugar – 1/4 cup
  • Oil – 1/2 cup
  • Salt – 1/2 tsp
  • Milk – 1/4 cup
  • Vanilla essence – 1 tsp
  • Chocolate – 75 gms (I have used Cadbury dairy milk Silk chocolate bar of 150 gms, out of which I have taken 75 gms)

PREPARATIONS :

  • Make the pieces of chocolate from the bar to make chunks
  • Line a cookie making tray with parchment paper
  • Pre heat the oven at 180 C for 10 minutes
  • Sieve together the flour and the baking soda

PROCEDURE :

  • In a mixing bowl gather together raw cane sugar, brown sugar, salt and vegetable oil, stir everything, now add in milk and vanilla essence, beat till it becomes fluffy
  • Now add in the sieved dry ingredients and mix everything well and then add in the chocolate chunks, cling wrap the bowl and refrigerate it to chill for about 30 minutes
  • Now scoop out from the dough & place it on the cookie sheet, leaving enough place between the cookies
  • Bake them for 10 to 12 minutes at 180 C in a pre heated oven (the baking time may vary) or until the edges become light brown
  • Remove and allow it to cool, you can store it in a air tight container up to one week
  • Enjoy it with a glass of milk
