PALAK PULAO

A yummy rice preparation using the Iron rich, super leafy vegetable also comprising of vitamin B C & E, Potassium, calcium, magnesium and omega 3 fatty acids which are all needed for the overall good health. It can prepared in two ways ie… sauteed palak puree along with spices can be added to the cooked rice or rice cooked in the palak puree. I shall share both the recipes with you all. To start with today I’m here to share the Palak pulao recipe made in the second method.

 

Ingredients :

  • Rice – 1 cup
  • Water – 2 cups
  • Salt to taste

Others :

  • OIl – 1 tbsp
  • Cumin seeds – 1/2 tbsp
  • Curry leaves – 1/2 tbsp
  • Onion – 1 big
  • Tomato – 1 big
  • Fresh green peas – 1/2 cup

To grind together :

  • Palak/Spinach, chopped – 3 cups (approximately)
  • Green chilli – 4 nos., (adjust)
  • Cinnamon – 1/2 an inch piece
  • Cloves – 2 nos.,
  • Black pepper corns – 1/4 tsp

 

PROCEDURE :

  • Grind together all the ingredients listed under the heading ‘to grind together’ coarsely (it yields 2 cups of puree) without water
  • Chop onion and cut tomato into long
  • Heat oil in a cooker, add in cumin seeds, curry leaves, chopped onion and saute till little soft, then add tomato, green peas and saute it again
  • Now add in ground/pureed palak mixture and allow it to come to boil while stirring in between
  • Now add in 2 cups of water and salt and allow it to boil again, then add in rinsed rice, stir well, close the lid and cook it till one whistle
  • Palak pulao is ready to serve. Serve it with any raita of your choice.
