ALU/ALOO BHATURA

Sharing yet another recipe from one of my old written recipe book. If I remember right I learnt this recipe when I was in college from a marwari (Rajasthan) friend. Since it is a deep fried one, I don’t make it very often, but I believe once in a while it is okay to eat deep fried things, as our body (stomach) should get used to it or should also have all the experiences. It turns out too good like restaurant ones (though I have never tasted this in any restaurant, but could make out by how it looks) Below mentioned quantity of ingredients yielded 14 bhaturas of shown size.

Ingredients :
- Potatoes – 3 big
- Whole wheat flour – 2&1/2 cups
- Baking powder – 1 tsp
- Coriander leaves – 1 tbsp
- Green chillies (chopped) – 2 nos.,
- Cumin seeds – 1 tsp
- Red chilli powder – 1/2 tsp
- Coriander powder – 1 tsp
- Salt to taste
- Water to knead the dough -1/2 to 3/4 cup is enough
- Oil – for deep frying
- Wheat flour/rice flour – for dusting
PROCEDURE :
- Boil and mash well the potatoes and keep it aside
- Now gather everything except oil and water in a wide bowl, combine everything
- Now add in mashed potato and mix well, knead it really well into a soft and stiff dough using water
- Roll it by dusting with wheat flour/rice flour
- Heat oil and deep fry the rolled bhaturas and serve
