GREEN GRAM IDLY a diabetic friendly, low calorie breakfast idea along with the goodness of fenugreek seeds

A Protein rich filling food using split green gram along with rice or semolina/rava/sooji. Mung beans are fiber rich filling food. Consumption of more fiber means eating fewer calories. Fiber rich food fills your stomach fast and makes you feel satisfied and takes longer time to digest, so it is definitely good for diabetic people. Green gram is loaded with nutritional health benefits along with vitamins and minerals. First of all this recipe is a steamed one, which is very good for health and besides if you make it using green gram and semolina, then it becomes more suitable for people with diabetes. Both the versions are made in similar way, below I have posted the pics of both the versions. Below mentioned quantity of ingredients yields 12 nos., of idly of the shown size.

Ingredients :

  • Semolina – 1 cup
  • Green gram – 1 cup
  • Fenugreek seeds – 1 tsp
  • Salt to taste
  • Water to grind

 

PROCEDURE :

  • Soak green gram & fenugreek seeds for 6 to 7 hours, if making idly using rice then soak rice also for the same duration separately (I always soak them in potable/drinking water so later I use the same water to grind)
  • Grind soaked green gram fenugreek seeds mixture till smooth using required water, to the same jar add in semolina and salt and run the mixie for few seconds (If using rice grind it along with green gram till smooth)

 

 

  • Transfer to a container/bowl, cover and allow it to sit for 8 to 10 hours or overnight for fermentation (it ferments too well)

 

  • Pour the fermented batter to the idly plates and steam them for 12 minutes or so
  • Remove and serve with any kind of chutney
