SPICY CARROT RICE aromatic flavorful yummy tasty dish

A spicy rice preparation using carrot which is very aromatic, flavorful, yummy, tasty one pot meal/lunch box idea, also which is a quick, easy and healthy recipe as well.

The freshly made masala powder which we add to this rice makes all the difference. It can be consumed as such or with any raita, both the ways – tastes superb.

Ingredients : the measuring cup used is of 250 ml

  • Cooked rice – 3 cups
  • Grated carrot – 1&1/2 cup
  • Onion – 1 big
  • Tomato – 1 big
  • Ghee – 1 tbsp
  • Mustard seeds – 1/2 tsp
  • White sesame seeds – 1/2 tbsp
  • Green chilies – 3 (adjust)
  • Curry leaves – 2 strings
  • Peanuts – 1/4 cup (I have used roasted, de skinned peanuts)
  • Turmeric powder – 1/2 tsp (heaped)
  • Sugar/Jaggery powder – 1 tsp
  • Lemon juice – 1/2 tbsp
  • Coriander leaves – 2 tbsp
  • Salt to taste
  • Water – 1/4 cup

To dry roast and powder :

  • Whole red chilies (byadigi, which is less spicy) – 3
  • Poppy seeds – 1/2 tsp
  • Green cardamom – 1 or 2
  • Cloves – 4
  • Cinnamon – 1 inch piece
  • Chana dal/split bengal gram – 1 tsp

PROCEDURE :

  • Dry roast and grind into a fine powder using all the ingredients listed below the heading ‘to dry roast and powder’
  • Cut onion & tomato into thin slices, chop green chilies
  • Heat ghee in a pan, add in mustard seeds, sesame seeds… when they splutter add in peanuts and curry leaves
  • Add in sliced onion and chopped green chilli saute for couple of minutes, now add in tomato, shredded carrot, saute while mixing everything for 2 to 3 minutes more
  • Now reduce the heat and make some space in the centre of the pan, add in 1/4 cup of water, then add in turmeric powder, ground masala powder, salt and sugar/jaggery powder
  • Increase the heat and combine everything well by stirring continuously, turn off the heat, add in cooked rice, Lemon juice and coriander leaves, mix well
  • Spicy carrot rice is ready to be served
