CARROT OTTU SHAVIGE

Just a small twist…. but a huge difference in taste, look and….. it turned out to be so delicious and different, with added flavor. Recently I tried making ottu shavige/string hoppers using carrot, just to make it more healthy & colorful rather than making it in regular white color. Earlier I have also made Khara (spicy) ottu shavige by adding the green chilies and some herbs and this time it is with carrot. Following the same method, we can also make this dish using beetroot, Palak, mint etc.

And …. the most important part is, I did not throw away the carrot paste which remains after we strain the ground carrot, but made chutney using the same and served along with carrot ottu shavige. Check below for the chutney recipe along with step wise pics.

Ingredients :

  • Rice flour/akki hittu – 1 cup
  • Water – 1&1/2 cup
  • Ghee – 1 tsp
  • Salt – to taste

 To grind together :

  • Grated carrot – 1 cup (tightly packed)
  • Green chilies – 4 (adjust)
  • Coriander leaves – 2 tbsp
  • Curry leaves – 2 strings
  • Lemon juice – 1 tsp (adjust)

 

PROCEDURE :

  • Gather all the ingredients listed below the heading ‘to grind together’ in a mixie jar and grind into a fine paste using 1 cup of water

 

  • Pass the ground paste through a strainer and collect the carrot & spices juice in a container, I got 1&1/2 cup of carrot juice after straining it, so added remaining 1/2 cup of water to make it 2 cups

 

  • Put the strained carrot-spice paste, 3 green chilies, 2 tbsp of roasted chana/hurigadale, 1/2 cup of grated fresh coconut and salt in a mixie jar and grind finely using needed water and serve with ottu shavige

  

  • Now bring the strained water to boil, when it is boiling rapidly, add in ghee and salt, stir well, turn the heat to low and now put the rice flour, all at once in the centre of the container and let it be like that for 3 to 4 minutes

   

  • Now with a spatula start stirring the mixture till it becomes like a dough and separates from the container, then turn off the heat, let it cool for some time, then knead it well

  

  • Now you can make two things –
  1. Divide the dough into equal portions and steam them for 10 to 12 minutes, then squeeze them directly into to the serving plate using a squeezer
  2. Divide the dough into equal portions, Put them in the squeezer, squeeze them into the idly plates and then steam them for 10 to 12 minutes

  • Serve the carrot ottu shavige along with carrot- coconut chutney
