WALNUT – SIHI AVALAKKI/SWEET POHA with the goodness of jaggery, & saffron strands

Yet another old/regular recipe with a small twist in it, made huge difference in taste as well as health point of view. Tried out our malenadu (my native) special sihi avalakki by adding walnuts in place of cashew nuts or almonds. It was just perfect and yummy. Whenever Suresh craves for any sweet, I try to make it more healthy by adding healthier stuffs. So today I have added walnuts, saffron strands along with jaggery.
Ingredients : measuring cup used – 240 ml
- Avalakki/Poha/rice flakes – 1 cup
- Jaggery – 1/2 cup (tightly packed)
- Water – 1/2 cup
- Saffron strands – 1/8 tsp
- Ghee – 1/2 tbsp
- Walnuts – 4 nos.,
- Raisins – 1 tbsp
- Grated fresh coconut – 1/3 cup (adjust)
- C C M Powder – 1/8 tsp (cardamom, clove, mace powdered together in equal quantity)
PROCEDURE :
- Rinse & wash well the rice flakes/avalakki/poha, drain all the water and keep it aside
- Dissolve jaggery in water, pass it through the strainer to remove the dust particles, add in saffron strands and boil for 1 or 2 minutes, remove from the heat and keep it aside
- Heat ghee in a pan, add in walnuts, raisins and roast them for a while, reduce the heat to low, now add in washed rice flakes, jaggery-saffron mixed syrup, coconut and ccm or cardamom powder
- Mix everything well, cover and let it cook on low heat only for 2 minutes, remove from the heat when there is still little moisture left (because after a while it will become still more dry),
