I have seen in the restaurants many a times that the khichdi is always accompanied with sweet kadhi in Gujarati cuisine, which tastes both spicy as well as sweet. And this combination is heavenly. And I like this kadhi very much, so thought of making it at home. Followed Mrs. Tarla Dalal’s recipe.
To go with this Kadhi I made green gram Khichdi but it also tasted superb with white rice
Ingredients : measuring cup used – 240 ml
- Besan/bengal gram flour/kadale hittu – 2&1/2 tbsp
- Fresh curds- 1 cup
- Water – 1&1/2 cup
- Ghee – 1 tsp
- Cumin seeds – 1/4 tsp
- Mustard seeds – 1/4 tsp
- Hing – a fat pinch
- Curry leaves – 1 string (I use curry leaves powder)
- Ginger-green chili paste – 1 tsp
- Raw cane sugar – 1&1/2 tbsp (you can use any kind of sugar)
- Salt – 1 tsp
- Coriander leaves – 1 tbsp
PROCEDURE :
- Gather curds, besan and 1/2 cup of water in a blender and blend for a while just to get the no lumps mixture, mix remaining 1 cup of water and keep it aside
- Heat ghee in a pan, add in the cumin seeds, mustard seeds and when they crackle, add in hing and stir well
- Now add in the besan-curd mixture, curry leaves, ginger-chili paste, sugar and salt
- Mix well while stirring continuously on high heat until it comes to boil ie…. for 2 minutes
- Reduce the heat to low and allow it to boil for 10 minutes or so which stirring occasionally
- Turn off the heat and sprinkle coriander leaves and serve hot
