INSTANT FRESH GREEN GRAPES PICKLE

Recently the fresh green grapes, which I bought were too sour, not even a bit of sweetness it had, very hope less I must say ! I had also bought along amla/Indian gooseberry/bettada nellikayi to make pickle. First I thought I would finish making amla pickle and this time I was planning to prepare the instant dry version of amla pickle. For that as you know we need to make pickle masala powder first, so went ahead with the process and made it, then I was left with some pickle masala powder and the sour grapes were in front of me…so what next, rinsed them well and made instant grapes pickle using the same masala powder ..that’s it!!

Ingredients : measuring cup used is of 250 ml
- Fresh green grapes (halved/cut)- 1 cup
- Pickle masala powder – 1&1/2 tbsp
- Oil – 1&1/2 tsp
- Mustard seeds – 1/4 tsp
- Salt – a pinch or two if needed, because pickle masala powder already has salt in it
For masala powder :
- Mustard seeds – 1&1/2 tbsp
- Red chilli powder – 2&1/2 tbsp (1&1/2 tbsp of less hot & 1 tbsp of hot)
- Fenugreek seeds – 1/2 tbsp
- Turmeric powder – 1 tsp
- Asafoetida/Hing – 1/4 tsp
- Salt – 2&1/2 to 3 tbsp (I normally use 3 tbsp)
PROCEDURE :
- Heat a pan and dry roast both mustard seeds and fenugreek seeds on low heat till aromatic and turns light brown and let it cool completely
- Gather roasted mustard seeds, fenugreek seeds, red chilli powder, turmeric powder, hing and salt in a mixie jar and grind it into a fine powder
- Heat oil in a pan, add in mustard seeds, allow them to splutter
- Turn the heat to low and add in pickle masala powder and mix well
- Now put cut/halved fresh green grapes and mix everything well for a minute on high heat, remove from the heat and transfer to a separate dish
