ORANGE PULAO/ಕಿತ್ತಳೆ ಹಣ್ಣಿನ ಪುಲಾವ್

A seasonal special dish using a sour fruit juice. Recently I did try two new dishes, in my own idea using sour fruits – Orange & fresh green grapes. Both the oranges and green grapes (made pickle, chutney), which I bought were sour.

Earlier many a times I have made chitranna using sour sweet lime/mosambi juice, so this time also thought of making something like that only. So prepared orange pulao along with adding few vegetables as well, which I thought goes well with the sour taste of orange juice. It turned out to be too tasty and I insist you all to try out this recipe before the oranges vanish.

Here the oranges, which I used were very sour, hence I made this pulao little more spicy and little bit of sweetness in those oranges balanced the overall taste of the Pulao.

Ingredients : measuring cup used – 250 ml, serves – 4

  • Rice – 1 cup
  • Water – 1 cup
  • Juice of orange – 1 cup
  • Orange chunks – 2 cups (adjust)
  • Capsicum (diced) – 3/4 cup
  • Carrot (diced) – 3/4 cup
  • Fresh green peas – 3/4 cup
  • Salt to taste

OTHERS :

  • Oil – 2 tsp
  • Cumin seeds – 1&1/2 tsp
  • Green chili – 2
  • Ginger – 1/2 tbsp
  • Spice powder (1 inch cinnamon, 6 cloves and 2 cardamom Powdered together) – 1/2 tbsp
  • Red chili powder (for color ie less spicy) – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Red chili powder (very hot/spicy) – 1/4 tsp

PROCEDURE :

  • Heat oil in a cooker, add in cumin seeds and when they crackle, add in capsicum, carrot, green Peas, ginger and also break the chilies and add them too and saute everything well for a minute
  • Now add in the spice powder, both the red chili powder and turmeric powder and mix everything well while stirring
  • Now add in rinsed rice and stir everything for a while, add in water, orange juice and required salt, by now it starts boiling, so close the lid and cook till 1 whistle – let it cool
  • Open the lid and add in orange chunks and combine everything well
  • Serve as such. There is no need for any kind of accompaniment, but if you wish you can make onion raita

Today I made this recipe along with some variations. First of all, I replaced oil with home made ghee, I have put around 1 tbsp of ghee. I have replaced turmeric powder with 1 tbsp of grated fresh turmeric. Instead of fresh peas, I have added french beans. Most importantly, I have put chopped 1 big onion and 2 fistful of fenugreek leaves/methi leaves roasted in 2 tsp of ghee, at the end just before adding orange chunks. Believe me these small variations made this Pulao more yummy, aromatic and tasty
