CAULIFLOWER PULAO

One of the flavorful, aromatic rice dish using cauliflower. Very easy and simple and quick recipe to make with very few condiments and veggies. We can put more kinds of vegetables along with cauliflower, but I use only fresh green peas, tomato and onion only. Today I served this pulao along with dal raita/bele raita (pigeon pea/arahar dal/togaribele) and both together goes very well and tasted yum.

Ingredients : measuring cup used – 250 ml, servings – 4 to 5
- Rice – 1 cup
- Boiled water – 2 cups
- Cauliflower – 1 cup
- Fresh green peas – 1/2 cup
- Onion – 1 medium sized (sliced)
- Tomato – 1 medium sized (sliced)
- Green chili – 3 nos., (chopped)
- Grated ginger – 1/2 tbsp
- oil – 1 tbsp
- Cumin seeds – 1/2 tbsp
- Bay leaves – 2 nos.,
- Turmeric powder – 1/2 tsp
- Red chili powder – 1&1/2 tsp (less spicy/hot, which gives out color)
- Coriander leaves – 1 tbsp
- Salt – to taste
PROCEDURE :
- Separate cauliflower into small florets and rinse well
- Boil water by adding little turmeric powder and salt, put cauliflower in that water and boil for a minute, transfer to a strainer, wash it under running water and keep it aside
- Heat oil in a pressure cooker, add in cumin seeds, bay leaves, ginger, green chili and saute for a minute, now add in onion and saute till translucent, then add in green peas, cauliflower florets and required salt (sufficient for vegetables), stir well while combining everything
- Add in rinsed rice, stir for a minutes, then add in turmeric powder, red chili powder and salt required (sufficient for rice), add in boiling water, sliced tomato, coriander leaves, stir once, close the lid and cook till one whistle
- Serve hot with lentil raita/bele raita
