RED PUMPKIN ROTTI/SIHIGUMBALA KAYI ROTTI

Today actually I was not willing to do palya or raita or huli using red pumpkin/sihi kumbala kayi. So thought for a while and realised that I was going to prepare akki rotti/rice flour rotti for breakfast, So thought of adding pumpkin to rice rotti like we make rice rotti using many other kinds of vegetables. so went ahead and made the same as I had planned and it turned out too tasty and yummy, moreover it is very quick and easy to make. So very gladly sharing the recipe of the same with you all.

Ingredients :
- Pumpkin/sihigumbala kayi – 1/2 kg
- Rice flour – 2 cups
- White sesame seeds – 1 tbsp
- Cumin seeds – 1 tbsp
- Green chili – 2
- Red chili powder – 1 tsp (less hot)
- Coriander leaves – 1/2 cup
- Curry leaves – 4 strings
- Grated fresh coconut – 1/2 cup
- Salt to taste
PROCEDURE :
- Wash and peel the pumpkin and cut into big cubes
- Cook the pumpkin cubes until still firm putting enough water, ie.. do not cook too softly, and then mash well using a fork or you can grate them also
- Gather all the other ingredients and knead into dough
- Spread evenly with your palm using little oil on a greased sheet
- Cook on both the sides on a heated tawa by smearing little oil
- Serve with any kind of accompaniment, today I served the rotti along with chutney pudi and elaneer Payasa/tender coconut payasa
