HORSE GRAM/HURULI/KULTHI SWEET USLI/SALAD

Horse gram or Kulthi (Hindi) or huruli kalu (Kannada) is a miracle pulse which is most rich in protein. It benefits our health as an anti oxidant, anti bacterial, anti fungal and anti hyperglycemic (un sprouted) forms. Very often I use this miracle pulse in cooking. There are recipe like horse gram/huruli kattina saaru & usli , huruli/horse gram chutney powder , huruli-semiya payasa , horse gram instant saaru/rasam , mishra kalugala/mixed pulses huli etc are posted here on my blog.

But today I’m here to share a sweet salad recipe using horse gram. Earlier I have posted something similar recipe using cow peas/lobia – cowpeas sweet usli/salad and this recipe s with a slight difference.

Ingredients :

  • Horse gram/Kulthi/huruli kalu – 1/2 cup (it gets doubled after soaking)
  • Water – 1/2 cup
  • Jaggery – 1/3 cup (tightly packed)
  • Grated fresh coconut – 1/3 cup
  • Ghee – 1 & 1/2 tsp
  • Cloves – 4 to 6
  • Cashews – 2 tbsp
  • Raisins – 1 tbsp
  • Cardamom powder – 1/2 tsp

PROCEDURE :

  • Clean, rinse well and soak the horse gram in enough water for over night
  • Pressure cook along with 1/2 cup of water for up to 3 to 4 whistles, pass it through the strainer and collect the stock to make saaru/rasam
  • Mean while dissolve jaggery in 2 to 3 tbsp of water
  • Heat ghee in a pan, add in cloves, cashews & raisins & cloves, fry for a while, now add in cooked horse gram, saute for a minute
  • Now add in dissolved jaggery syrup and allow it to boil until the mixture turns almost dry
  • Put cardamom powder and coconut, combine well on high heat continuously for a minute, then remove from the heat and serve
