PEANUT/KADLEKAYI/ SHENGA USLI/SALAD

Though high in calories, peanuts are a good source of protein, fiber and healthy fats. Peanuts are nutrient rich nut/legume containing Potassium, phosphorous, copper, magnesium and vitamins B (B1, B3), E. We make usli/salad using raw peanuts. In Karnataka raw, juicy groundnuts are available from the month of November ie during Karthika masa/month. We make salad using those raw groundnuts, but we can also make this whenever feel like by soaking the dried peanuts. So today’s recipe is usli/salad made using dried groundnut/peanuts. Make it spicy so that it tastes yummy.

Ingredients : measuring cup – 250 ml, servings – 4 to 6
- Groundnut/peanuts – 1/2 cup
- Oil – 2 tsp
- Mustard seeds – 1/2 tsp
- Split bengal gram/chana dal – 1 tbsp
- Split black gram/urad dal – 1/2 tbsp
- Ginger – 1 tbsp
- Green chilies – 6 to 8 (chopped or paste)
- Curry leaves – 2 strings
- Coriander leaves – tbsp
- Turmeric powder – 1/2 tsp
- Hing – 1/4 tsp
- Salt to taste
- Lemon juice as required
- Grated fresh coconut – 1/4 cup (adjust)
PROCEDURE :
- Soak peanuts for overnight in enough water, drain all the water and cook for 2 whistles
- Heat oil in a pan, add in mustard seeds, chana dal, urad dal, green chili, ginger, curry leaves, coriander leaves and stir for minute, then add in turmeric powder and hing, stir again
- Now add in cooked peanuts, salt and grated fresh coconut, stir while combining everything well (you can also add 1/2 tsp of sugar/jaggery)
- Remove from the heat and add in lemon juice, mix and serve
