CHILDREN’S DAY SPECIAL

Children’s day wishes to All. I’m here with a two quick recipes, which happens to be the most favorite of all the children irrespective of the age.
RAVE-BESAN LAADU
Made rave-besan laadu/ladoo & chakli today. To the rave-besan laadu, unlike every time I have put roasted melon seeds instead of regular cashews, almonds etc.
Ingredients for making laadu : measuring cup used – 250 ml, makes 9 laadus of below show size
- Besan/gram flour – 1/2 cup (tightly packed)
- Rave/semolina/sooji – 1/2 cup (I have used upma rava here)
- Home made ghee – 2&1/2 tbsp
- Powdered date palm rock sugar – 1/3 cup
- Melon seeds – 2 tbsp
- Cardamom powder – 1/2 tsp
PROCEDURE :
- Dry roast semolina until raw smell vanishes, remove to a plate
- Dry roast gram flour until raw smell vanishes, add in roasted semolina, 1/2 tbsp ghee, roasted melon seeds and cardamom powder, roast everything well until you get nice aroma on low heat
- Remove to a separate bowl or plate, add in powdered sugar and remaining 2 tbsp of ghee and bind into laadus/ladoos
RICE FLOUR CHAKLI
Though made chakli using the same regular ingredients, except for a small change, ie… I have put melted, cooled (at room temperature) home made ghee instead of hot oil or butter etc and believe me it has turned out to be so tasty !
Ingredients for making chakli : measuring cup used – 250 ml
- Rice flour – 1 cup
- Black gram flour/uddina hittu -1/4 cup
- White sesame seeds – 2 tbsp
- Hing – 1/4 tsp
- Salt – 1/3 tsp (adjust)
PROCEDURE :
- Dry roast both rice flout and urad flour together to remove the moisture in them, transfer to a bowl
- Put all the other ingredients, combine well, add in required water and knead well into soft, stiff dough and set aside covered for 15 to 20 minutes
- Knead again once and put the dough in the chakli mould and make chakli of desired size and deep fry until done
