CASHEW NUTS/KAJU KHEER/GODAMBI PAYASA

Yes you read it right..it is cashew nuts desert or kaju kheer or godambi payasa – the new year special desert at our place. We can definitely treat ourselves to this rich, creamy, nutritious Kheer at least once in a blue moon if not often.
Though cashew nuts are high in saturated fat, but also it is rich in vitamin E and a good source of minerals like magnesium & zinc. Cashew nuts have around 17 percent saturated fat whereas other nuts like almonds and walnuts are at a low of 6 to 7 percent. But rarely we can definitely consume in a small quantity. Studies say raw cashews are healthier compared to salted ones. This is one more recipe adopted from one of my written recipe book, but I have made lot of modifications by making it in totally different way.
Ingredients : measuring cup used – 250 ml, servings 4 (according to below shown quantity)
- Cashew nuts – 1/2 cup
- Milk – 1 litre
- Raw cane sugar – 1/2 cup (you can use any sugar)
- Saffron strands – 1/4 tsp
- Warm milk – 1 tbsp
- Cardamom powder – 1/4 tsp
- Water – 3 to 4 tbsp (to grind cashew nuts)
Others :
- Figs – 4
- Dates- 4
- Almonds – 10
- Pistachios – 10
- Broken cashew nuts – 1 tbsp
PROCEDURE :
- Soak the cashew nuts in enough water for minimum 1 hour, then drain all the water and grind slightly coarsely using 3 to 4 tbsp of water
- Soak saffron strands in 1 tbsp of warm milk

- Soak all the dry fruits & nuts listed under the heading ‘others’ in hot water for minimum 20 minutes, then peel the soaked nuts, remove the dates seed and chop them all
- Put the milk to boil in thick bottomed wide vessel, then turn the heat to low and add in sugar, stir continuously for 2 to 3 minutes then again simmer for 2 to 3 minutes stirring occasionally
- Now add in cashew nut paste to the milk, stir well, turn the heat to high keep stirring slowly but continuously until it resumes boil and turns little thick, then turn off the heat
- Put few dry fruits and nuts pieces in a serving glass/bowl, pour the cashew-milk mixture and place some saffron milk on the top with a spoon and serve

- You can add all the chopped nuts and fruits to the milk cashew mixture, then pour into the individual glass/bowl and serve
