KHARJURA DOSAY/DATES DOSA …crisp savory pancake

I must say…this recipe instantly became my most favorite one as soon as I made. Since then made this many a times and every time I feel like this is more tasty than the previous time. When once I saw a dosay recipe which uses dates in it by mrs. subhashini hiranya on face book food group, even I wanted to make it immediately. Thought and added the proportions of the ingredients as per our requirement and it turned out to be the delicious dosay ever.
From improving bone health to promoting beautiful skin dates have tremendous healing power. Dates contains calcium, iron, phosphorus, potassium, magnesium and zinc. There are 30 kinds of dates are available around the world it seems and broadly there are three types ie dry dates, semi dry dates and soft dates and it can differentiated on the basis of glucose, sucrose & fructose content in them. Dates are free from cholesterol, hey are fiber rich and rich in protein. They are considered very good for the bone health. Not to forget they are rich in iron and promotes digestion.

By the way some of the dosay uses special spice powder which we sprinkle on the dosay, can be made at home very easily. You can check that recipe here by clicking on the given link. We can always alter the ingredients and make the powder as per our requirement and to suit our taste.
Ingredients : measuring cup used – 250 ml, serves 3 to 4 persons
- Rice (I use sona masuri) – 1 cup
- Split black gram/uddina bele – 2 tbsp
- Fenugreek seeds/menthya – 1 tsp
- seedless dates/Kharjura – 1/2 cup
- Salt to taste
PROCEDURE :
- Rinse well and soak the rice, lentil along with fenugreek seeds in enough water for 4 hours or so
- After 4 hours drain all the water (you can use the same water to grind if it is a potable water), add in salt and dates and grind into a fine paste using required water
- Transfer the batter to a container, cover and keep it for overnight or 8 to 9 hours for fermentation
- Heat the griddle/tawa and make dosay, like we make any other regular dosay and serve hot with the chutney of your choice.
You know we have put dates in the recipe, obviously the dosay will be on the sweeter side, so make the accompaniment which is little spicy to go with this dosay
