COFFEE COOKIES …..with whole wheat flour in coffee bean shape

One of the very easy cookie recipe, flavored using coffee decoction and shaped like coffee bean as well. I learnt this recipe from Sonia Gupta Ji, an awesome baking expert. It is very fun to make these goodies and I definitely enjoyed making them.
In the original recipe, Apf (all purpose flour) is being used along with a small amount of corn flour to get that crunchiness but I have replaced Apf with whole wheat flour and instead of corn flour I have put maize flour in the first batch and rice flour in the successive batches, till now I have made this cookie for four to five times because more than relishing I enjoy shaping them like a coffee bean and also they are so yummy and aromatic as this recipe uses chocolate powder and flavor as well And I am a big fan of chocolate taste/flavor, so anything made with chocolate powder/flavor automatically becomes my favorite.
Very recently I had made honey cake, using whole wheat flour and the recipe of which I will be sharing here asap. Now let’s see how to make these coffee bean cookies.
Ingredients : measurements in grams, makes 14 cookies of the shown size
- Whole wheat flour – 80 gms
- Cocoa powder (unsweetened) – 3 tbsp
- Baking powder – 1/4 tsp
- Coffee decoction – 1 tbsp
- Colombian coffee flavor – 1/2 tsp (I haven’t put)
- Salted butter (at room temperature) – 50 gms
- Powdered sugar (I have put brown sugar) – 50 gms
- Rice flour/maize flour – 1 tbsp
PROCEDURE :
- To begin with take butter, powdered sugar and maize or rice flour in a parath/bowl, and using a spoon or your hand or electric whisker start mixing everything until it turns pale in color or creamy
- Then add wheat flour, cocoa powder and baking powder and combine everything well lightly with your fingers
- Then add the coffee decoction and coffee flavor (if using) and bind the flour. Do not knead the dough , just combine and bind it
- Now shape it like a log and make 14 equal portions
- Then take one portion, roll it well between your palm until smooth, make it in the oval shape, flatten a little and make a cut in the centre using butter knife, remember the cut should not be deep, otherwise the cookie will spread
- Arrange them all in a lined baking tray (lined with parchment paper) and bake them for 12 to 15 minutes in a pre heated oven @ 160 degree Celsius
- Once baked, take out from the oven and let it cool completely and enjoy
