EGG LESS ORANGE CAKE

Actually wanted to make the cake using Pineapple but when I went to buy the pineapple, they were not so good. But then my eyes fell on oranges which were stacked so beautifully. Changed my mind and bought oranges only and made cake using the bright, colorful oranges, the juice of which was not that sweet but not sour as well.

This recipe was in my to do list since very long time. Mukund, my second son asked for this cake many a times, I brought the oranges also each time he asked, but it got over in some way or the other. But today was that day I guess !

As this is an egg less recipe, I have replaced it with curd. I have used whole wheat flour (TWF) in this recipe along with powdered brown sugar. The batter consumed around 250 ml of orange juice, so the out come was so flavorful and aromatic

This is one of the very easy to make cake recipe with ingredients which can be find easily at every kitchen. I haven’t used anything fancy here. So you can definitely give it a try. Do try it out and let me know your feedback in the comment section.

Instructions :

  • Tin size – 7 by 7 inches
  • MW temperature – 180 degree c
  • Baking time – 27 minutes
  • Demould Instructions – immediately
  • Cooling time – 10 minutes

Ingredients :

  • Whole wheat flour – 250 gms
  • Orange juice – 250 ml
  • Orange zest – 1/2 tbsp
  • Orange flesh – 2 tbsp (the remains which we get after passing the juice through the strainer)
  • Powdered brown sugar – 80 gms
  • Curd – 80 gms
  • Oil – 60 ml (any non aromatic oil)
  • Essence – Honey almond
  • Baking powder – 1/2 tsp
  • Baking soda – 1 tsp
  • Salt – 1/2 tsp

PROCEDURE :

  1. Sift whole wheat flour, baking soda, baking powder and salt together and set aside. Whenever I make cake using wheat flour, I sift it twice or thrice before sifting it on the liquid ingredients, ie … it will be for the fourth time I sift it on the liquid ingredients bowl and it works for me.
  2. In a bowl take the curd, powdered sugar, oil and whisk everything until you get a smooth texture, then add the essence, orange zest, orange flesh and mix
  3. Now add dry ingredients into wet ingredients and mix gently by adding orange juice gradually to get a smooth batter of dropping consistency
  4. Meanwhile keep your oven for preheating at 180* C
  5. Pour the prepared batter into the greased cake tin and bake it in preheated oven at 180 degree c for 28 minutes or until it passes the toothpick test
  6. Take out the cake from the oven, demould and let it cool completely before you serve

I have spread orange marmalade on the cake and sprinkled it with desiccated coconut powder, which enhanced the taste of the cake
