Super soft, colorful loaf cake recipe, which I made for a diwali contest. It was really a good experience. The ingredients and their measurements used in this recipe are roughly my guess work but not copied from anywhere/anyone. So …. I can say kind of my own recipe.

Well we always like baked goodies or any kind of sweets for that matter, slightly to be on the less sweeter side, so you can always adjust the sweetness when doing my recipes.

I have put mainly 3 flavours in this recipe (contest was in association with Ossoro) Ossoro’s milk masala flavour, saffron flavour & Shrikhand flavour which did blend well along so very well and the outcome is an awesome, yummy, totally aromatic and flavourful tea time accompaniment in the form of a loaf cake

Apart from the flavours, yet another special ingredient in this recipe is home made milk masala powder, which gives this cake a spicy taste by making it more suitable to pair along with tea/coffee.

This cake has also been sweetened by putting powdered red rock sugar (kempu kallu sakkare) and it also has enhanced the color of the cake. I could obtain that vibrant color due to the usage of fair amount of saffron strands (milk masala powder), Orange juice and mainly red rock sugar.

Instructions :

  • Tin size – 6 by 4 inches
  • MW temperature – 170 degree C
  • Baking time – 30 to 35 minutes or clear/clean toothpick test
  • Demould Instructions – 10 minutes
  • Cooling time – 20 minutes

Ingredients :

For home made milk masala powder :

  • Almonds – 10
  • Black pepper corns – 6
  • Cloves – 4 Saffron strands – 1/3 tsp
  • Sugar (raw cane) – 1 tbsp
  • Cardamom – 2

Gather together all the ingredients and grind into a fine powder

For the cake batter :

  • Wheat flour – 150 gm
  • Condensed milk – 90 gm
  • Milk – 80 ml
  • Oil – 60 ml (any odourless, flavor less oil)
  • Baking powder – 1/2 tsp
  • Baking soda – 1/4 tsp
  • Salt – 1/4 tsp
  • Red rock sugar (Powdered) – 25 gm
  • Grated red carrot – 30 gm
  • Fresh orange juice – 100 ml
  • Milk masala Powder – 2 tbsp
  • Milk masala flavour – 1/2 tsp
  • Kesar flavour – 1/2 tsp
  • Shrikhand flavour – 1/2 tsp

PROCEDURE :

  1. Pre heat the oven at 170 degree C (mine is a microwave convection oven) and also line the loaf tin with parchment paper
  2. In a bowl gather together condensed milk, powdered red rock sugar, oil and milk masala flavour and whip the mixture
  3. Then add in orange juice, milk masala powder, grated carrot, Kesar flavour and combine well
  4. Now in a strainer put the flour, baking powder, baking soda, salt and sieve the flour on the wet mixture
  5. Add in the Shrikhand flavour and stir gently by adding milk gradually
  6. Transfer the batter to the lined tin, tap for couple of times on the kitchen counter and bake in a preheated oven for 35 minutes (remember temperature and baking time differs from oven to oven)
  7. Check the doneness , remove from the oven, rest for 10 minutes, then transfer the cake on a wire rack, let it cool completely, cut into loaves and enjoy with tea/coffee
