I wanted to make muffins and the main ingredients on my mind were Khapli wheat flour & Orange juice, but then there was a pack of amaranth flour in front of me, so instantly decided and have put equal quantity of sharbati wheat flour (always I myself get it milled) and the amaranth flour

And the end result what I got is very delightfully aromatic, yummy muffins to relish on along with awesome flavour and taste of orange

Sharbati wheat flour has its own kind of nice aroma, but the addition of amaranth flour definitely enhanced the aroma and flavour of the muffin further to the next level

The kind of powdered sugar I have put in this recipe is from our Karnataka, which is called Kallu sakkare which translates to rock sugar, in that also I have used red colored rock sugar. It is believed that the rock sugar benefits our health in many ways . So the addition of this sugar resulted in the enhancement of the color of the muffins

Baking Instructions :

  • Muffin tray/Muffin cups
  • MW temperature – 160 degree c
  • Baking time – 22 minutes
  • Demould Instructions – immediately
  • Cooling time – 5 to 10 minutes

Ingredients :

  • Amaranth flour – 75 gm
  • Wheat flour – 75 gm
  • Baking powder – 1/2 tsp
  • Baking soda – 1/4 tsp
  • Salt – 1/4 tsp
  • Condensed milk – 80 gm
  • Oil – 60 ml (any odourless/flavorless)
  • Powdered sugar – 25 gm (red rock sugar/Kempu kallu sakkare)
  • Orange juice – 110ml
  • Chocolate chips – 30 gms
  • Milk – 80 ml
  • French vanilla flavour – 1 tsp (Ossoro’s)
  • Pistachios – to sprinkle on top (optional)

PROCEDURE :

  • Sieve together amaranth flour, wheat flour, baking powder, baking soda and salt
  • In a bowl take condensed milk, oil, powdered sugar and whisk well
  • Now add the orange juice, mix again, then add the sieved flour mix , chocolate chips, vanilla flavour and mix again gently
  • Now add milk gradually (as the consumption of the milk may vary from flour to flour) to get the dropping consistency
  • Pour the batter into the lined paper cups/muffin tray, sprinkle the pistachios on the top
  • And bake in the preheated oven at 160 degree C for 22 minutes
  • Check the doneness, remove from the tray and rest it for 5 minutes on the wire rack
  • Relish the yummy muffins
