What an amazing recipe !!!! Have it for breakfast or as a dessert, either way you’ll find it delightful.

So….. do you have over ripe bananas at home, thinking of throwing it away … no .. wait … you can use those overripe/ripen bananas in this yummy way !!

I had around four ripe bananas at home, which were not over ripe but they were more ripe and I didn’t want to make those same/usual banana cake or muffin or bread. So was looking for some kind of interesting recipe, which I thought should appeal to me instantly.

So continued my search on the google and my search ended when I saw this particular Pudding recipe by temeculablogs.com

Though I have made lot of changes in the recipe, still I got the idea of making this pudding in this particular way by looking at the recipe on that blog. So…. ek mention toh banta hai …..

We can use the over ripen bananas also in this recipes, but I have put bananas which were little more ripen. This is an egg free pudding recipe made using Powdered oats and have put organic jaggery powder to avail the sweetness. The sweetness is absolutely perfect, but you can always adjust the sweetness as per requirement.

However adding flavour is optional and you can chose any flavor which you feel goes well with this pudding. But I have put Ossoro’s banana nut bread flavour and I must say it definitely enhanced the flavour and released an awesome aroma while baking.

Alright … let’s see the recipe now

When I made this pudding for the first time, I had put the bread cubes as such ie … without toasting, but then onwards I started using toasted bread and we liked the latter one the most. In the below pic you can have a look

INSTRUCTIONS :

  • Tin size – 7 by 7 inches
  • MW temperature – 160 degree c
  • Baking time – 30 minutes
  • Demould Instructions – immediately
  • Cooling time – NA

Ingredients : measuring cup used – 200 ml

  • Oats (powdered) – 1/2 cup / 45 gm
  • Salt – 1/4 tsp
  • Bananas (more ripe) – 4 medium sized / 250 gm
  • Wheat bread – 4 slices
  • Flax seed, powdered – 1 tbsp
  • Hot water – 3 tbsp
  • Milk (at room temperature) – 1 cup +1 or 2 tbsp if required
  • Organic jaggery Powder – 2 tbsp
  • Flavour/essence – any (optional) I have put Ossoro’s banana nut bread flavour
  • Choco chips – 1/4 to 1/3 cup

PREPARATION :

  • To begin with, take flax seed powder in a small cup, add 3 tbsp of hot water, stir well and set aside (this is the egg replacer)
  • Toast the bread slices and cut into cubes (9 pieces of a slice)
  • Peel and slice the bananas into round shape
  • Grease the baking tin/tray with 1/4 tsp of butter
  • Pre heat the oven

POCEDURE :

  • Gather powdered oats, jaggery powder, flavour (if using) and salt in a bowl, also put the flax seed gel and stir by adding 3/4 cup of milk
  • Now arrange the bread cubes in the greased baking tin/tray evenly, Pour the oats mixture evenly on top of that
  • Then arrange the banana slices evenly on it, sprinkle the choco chips all over
  • Bake in a pre heated oven at 160 degree C for 30 minutes
