BUN DOSAY/DOSA/ಬನ್ ದೋಸೆ …with less rice and more of fenugreek seeds

Bun dosa/y is one of the popular, soft, thick kind of dosa/y familiar with the people of Tamilnadu and Kerala. it gets the texture, size and look as same as baked bun, may be that’s why this is famous as bun dosa/y.

Unlike the other dosa/y varieties, this one doesn’t contain any lentil in it. But it contains the flavour and aroma of fresh coconut evidently. And this has a considerable amount of fenugreek seeds in it. Very long back I have tasted this dosa/y in a restaurant in Chennai. They make it in two ways ie… with tempering and without adding any tempering. I normally make it without putting tempering.

As the name itself depicts, this dosa is made in small size and thick like bun. So no need to spread the batter. This should be covered and cooked on low heat and takes little more time than usual ones.

Normally most of them put only one tsp of fenugreek seeds to 2 to 3 cups of rice, but I have my own measurement of ingredients to make this dosa/y and add more fenugreek seeds into it with comparatively less rice.

One important thing which makes a difference while making the batter for this dosa/y is, we need to whisk the ground batter very well using our hand (you can check in the video) We do whisk any dosa/y idly batter for sure for that matter, but in this more whisking is needed comparatively.

Ingredients : measuring cup used – 200 ml

  1. Rice (sona masuri) – 1&1/2 cups
  2. Fenugreek seeds – 1/2 tbsp
  3. Rice flakes/Poha – 1 cup
  4. Grated fresh coconut – 1 cup
  5. Salt – to taste
  6. Water – to grind (very little)
  7. Oil – to smear on the dosay

PROCEDURE :

  • Rinse well the rice, fenugreek seeds and rice flakes for couple of times and soak in enough water for 4 to 6 hours
  • Then discard all the water, add grated coconut and salt and grind into a very smooth paste using very less water. Use water as less as possible
  • Transfer all the batter to a container and whisk well using your hand (check in the above video), cover and keep it overnight or for 10 to 12 hours for fermentation
  • Next morning, check the batter, the fermented batter should be of idly batter consistency
  • Heat a deep bottomed pan/karahi, pour 2 ladle full of batter in the centre, smear little oil, cover and let it cook on medium low heat
  • Once done flip and let it cook, repeat like this with the remaining batter as well
  • Serve with any kind of chutney of your choice
