MANGO OTTU SHAVIGE …. hot & sweet string hoppers made using raw & ripe mango/ಮಾವಿನ ಕಾಯಿ ಹಣ್ಣು ಒತ್ತು ಶ್ಯಾವಿಗೆ

While trying to make the most use of seasonal goodies, for example both raw mango and ripe mango, today I tried and created one more…. nah…. two more variations of string hoppers aka our own Ottu shavige.
Yes … after trying out Carrot ottu shavige and hot & sweet ottu shavige, now I’m here with one more pair of hot & sweet ottu shavige by putting raw mango and some spices to obtain spiciness and ripe mango to obtain sweetness.
I did not add any extra sweet like any kind of sugar or jaggery to the sweet version rather it’s only the sweetness of mango. And the mango was totally sweet. If in case any one wants more sweet then, they can put mango puree/pulp on the ottu shavige or dip the shavige in it just like we eat the regular shavige along with gasagase haalu.
The sweet version does tastes regular mango flavour but the specialty lies in the spicy version. It was totally a great idea to put together raw mango, chilies etc which gave the string hoppers totally different taste. It was tangy, spicy and delicious.
When I opened the lid of the steamer after steaming the shavige, The aroma it released was a pure bliss !! truly heavenly!!
So now I’m sure, we know and get too many ideas of making different flavoured string hoppers …right? We have so many fruits and vegetables to get the different flavour as well as the taste and aroma. So… slowly we shall try all of them – hope you do agree with me !
Ingredients : measuring cup used – 250 ml
For tangy/spicy version :
- Grated raw mango – 1/3 cup
- Green chilies – 5 to 6
- Rock salt- to taste ( I have put heaped 1 tsp)
- Rice flour – 1/2 cup
- Water – 3/4 cup
- Cumin powder – 1/2 tsp
- Oil – 1 tsp
How To make :
- Grind together grated raw mango, chilies and salt by adding 1/4 cup of water into a very fine paste and pass it through the strainer to obtain the juice. Add the remaining water to the juice to make it 3/4 cup in measurement
- Take the juice in a small vessel, heat and bring it to boil, when it boils rapidly add the cumin powder, reduce the heat and add the rice flour all at once in the centre of the vessel and leave it like that for 2 to 3 minutes
- Now with the spatula start stirring the mixture till it becomes like a dough and separated from the vessel, turn off the heat, let it cool for some time and then knead it well and make it log shaped. Put the log into the squeezer and squeeze into the idly plate and steam for 10 to 12 minutes
For sweet version :
- Ripe mango – 1 (I could obtain 1/3 cup juice)
- Cinnamon Powder – 1/4 tsp
- Cardamom Powder – 1/2 tsp
- Rice flour – 1/2 cup
- Water – 3/4 cup
- Ghee – 1 tsp (optional) (I forgot to add)
How to make :
- Wash well and slice the mango and grate it (check in the below pics), Pass it through the strainer and collect the juice. You can use the pulp later to serve with shavige
- Now add water to the obtained juice to make it 3/4 cup in total, heat and bring it to boil, when it is rapidly boiling, add the cinnamon powder, cardamom powder and ghee, stir well, reduce the heat, and add the rice flour all at once in the centre of the vessel and leave it like that for 2 to 3 minutes
- Now with the spatula start stirring the mixture till it becomes like a dough and separated from the vessel, turn off the heat, let it cool for some time and then knead it well and make it log shaped
- Put the log into the squeezer and squeeze into the idly plate and steam for 10 to 12 minutes
