EGG FREE BANANA SEMOLINA LOAF CAKE/BANANA BREAD….using minimum ingredients

Feeling very very glad to have created this awesome egg free recipe in my own way using minimum ingredients and without using any kind of dairy products
Recently had left with four medium sized ripen bananas and I definitely wanted to make banana cake using those . But I didn’t want to put any dairy products like curd, milk etc as well.
Somehow I don’t like the idea of putting dairy products into the cake along with banana and also this time I didn’t want to use whole wheat flour as off late I have made muffins, cakes, Pizza etc using wheat flour repeatedly.
However in everyday cooking I do put all the ingredients/stuffs depending on the eye measurement…. So this time I wanted to apply the same method in baking as well and I thought… zyada se zyada what will happen I would end up wasting some stuff !! But then that is very obvious/normal while baking. In baking if you want to try any new dish, it includes lot of trial and error and only sometimes you get the dish proper and perfect in the first attempt itself otherwise repeatedly we have make that dish until we get it right …. isn’t it ?
So ….. went ahead and followed eye measurement and put all the ingredients according to it. I have put coconut sugar for the sweetness apart from banana and by the way I have put four medium sized bananas in the recipe which is way more than enough to get the sweetness in the cake as we prefer moderately sweetened cakes or sweets.
And I definitely wanted to put cold pressed coconut oil in this cake recipe but I was running short of it so I ended up putting sunflower oil. Now let’s check how to make this easy peasy, healthy, quick and fuss free cake.

Instructions :
- Tin size – 4 by 8 inches
- MW temperature – 180 degree c
- Baking time – 30 minutes
- Demould Instructions – immediately
- Cooling time – 15 to 20 minutes
Ingredients : measurement in grams
- Ripened banana – 275 gm
- Fine quality semolina/chiroti rave/sooji 150 gm
- Oil – 45 ml + 1/2 tsp
- Coconut sugar – 65 gm
- Baking powder – 1/4 tsp
- Baking soda – 1/4 tsp
- Salt – 1/4 tsp
- Pecans – 10 nos., (optional) or You can put any nuts or dry fruits or choco chips etc
PROCEDURE :
- Take ripened banana, coconut sugar and oil in a bowl and whisk using a hand mixer/spatula until sugar dissolves completely and banana is mashed fully
- Now add the semolina and mix the mixture well, cover and set it aside for 10 minutes
- After 10 minutes, stir baking powder, baking soda and salt in 1/2 tsp of oil and add it to the banana semolina mixture and mix everything well in cut and fold method
- Transfer the mixture into a greased tin (I greased the tin using cold pressed coconut oil), tap the tin to remove the air bubbles and sprinkle the Pecans and bake at 180 d C for 30 minutes or until the tester comes out clean.
- It took exactly 30 minutes to bake in my conventional microwave oven, You can do as per your oven’s requirement
