TAWA SPOT IDLY/ FERMENTED BATTER SPOT IDLY/ಹುದುಗಿದ ಹಿಟ್ಟಿನ ಸ್ಪಾಟ್ ಇಡ್ಲಿ

This is one of the great twist to one of our most favourite dish, Idly. These idlys are quite famous in Hyderabad, but now a days slowly becoming famous in other different places also
These can be made using non fermented instant idly batter as well, but … fermented idly batter ka maza hi kuch aur hai na ….
The vegetable masala mixture, which is something similar to what we put in to Namma Bengaluru special masala bread toast , but it is made with one more twist that, we put chutney Pudi/Chutney Powder along with all the other spices and that makes a huge difference in taste
And one more main difference is these spot idlys are not steamed ones but layered with a delectable vegetable masala mixture , which is crispy on the outside and soft inside. The spice powder that is chutney Pudi/Chutney Powder we put in the vegetable mixture makes all the difference and thus makes this dish special
Actually, in this recipe, the vegetable mixture is made directly on the tawa, later divided into many small portions on the tawa itself, then they pour the idly batter on the mixture, cover and allows the batter to get cooked first, and further cook it until crisp on both the sides by smearing oil
Ingredients : measuring cup used 250 ml
- Idly batter – 2 to 3 cups
- Oil – 2 tbsp
- Mustard seeds – 1/2 tsp
- Onion – 2 cups
- Tomato – 1&1/4 cup
- Grated carrot – 1 cup
- Green chili – 1 big
- Ginger – 1 tsp
- Curry leaves – 2 sprigs
- Coriander leaves – 2 to 3 tbsp
- Turmeric powder – 1/2 tsp
- Red chili powder – 1 tsp
- Chutney Powder – 2 tbsp
- Jaggery powder – 2 tsp
- Salt to taste
PROCEDURE :
- Heat oil in a Pan, put mustard seeds, green chili, ginger, curry leaves, coriander leaves and stir for a minute, Now put onion, carrot and saute until both onion and carrot turns slightly soft, now add tomatoes and salt saute until tomatoes are cooked, cover and let it cook
- Now add in chutney powder, red chili powder, turmeric powder and jaggery stir well until everything gets combined well
- Add 1/2 cup of water and stir continuously on high heat for a couple of minutes, remove from the heat
- Now heat a tawa, smear little oil, place and spread a spoon of mixture on the tawa, pour a big spoon of idly batter on the mixture, reduce the heat to low, cover and let it cook
- Cook on the other side too
- Serve crisp tawa spot idly along with chutney
