PINEAPPLE PUDDING| PINEAPPLE HALWA|

One more sweet dish, using fruit, which I tasted in a restaurant….( Bikanerwala) immediately I could guess the ingredients in it. Its aroma itself said everything. Then curiously enquired in the sweet section, the man agreed to my guess… he said ” hanji madam aisa hee banta hai “…. unwillingly !!!!
Its a delicious sweet with very few ingredients and it turns out to be the yummiest. One more thing is, I used homemade Khova / Khoya, which I prepared freshly ( in Microwave ) for this recipe. So I’m glad to share the recipe. My guess was right as I got it perfect, more or less exactly like the restaurant.

Ingredients : measuring cup used – 200 ml
- Pineapple ( grated ) – 1 & 1/2 cup
- Sugar – 1/4 cup
- Ghee – 1 & 1/2 tbsp
- Saffron strands – few
- Khova / Khoya – made out of 1 tin milkmaid
- Pistachio – 1/4 cup chopped
- Water – 1/2 cup
PROCEDURE :
- In a pan add pineapple and water, bring it to boil
- Add ghee and Sugar, cook well till sugar dissolves and again water evaporates
- Add few saffron strands and keep few for garnishing
- Now add Khova / Khoya , cook further for 8 to 10 minutes
- Garnish with remaining saffron strands and pistachio pieces
- Serve hot
