Fried rice|

A rice preparation which is most favourite to my both sons. While preparing fried rice I transform it according to our tastes and preferences, So only product which is used similar to Chinese is soya sauce.

Otherwise I use home made green chilli paste in place of green chilli sauce & use ginger for that extra flavour & pepper powder as usual. Its a tasty, different rice preparation which suits lunch box as well.

Ingredient : measuring cup used – 250 ml

  • Cooked rice – 2 cups
  • vegetables cut into long –
  1. Onion – 1/4 cup
  2. Carrot – 1/4 cup
  3. Capsicum – 1/4 cup
  4. French beans – 1/4 cup
  5. Cabbage – 1/4 cup
  • Green chilli – 4 nos., or as per taste (Actually I wanted it spicy , so I have put four)
  • Ginger – 1″ piece
  • Oil – 1 tbsp
  • Cumin seeds – 1 tsp
  • Pepper Powder – 1/2 tsp
  • Soya sauce – 1 tbsp
  • Salt to taste

PROCEDURE :

  • Blanch French beans and carrot (Briefly boil) and Keep it aside
  • Grind green chilli & ginger to make fine paste
  • Heat Oil in a pan, add cumin seeds… when it splutter, add onion, capsicum and cabbage saute continuously for few minutes on medium high flame
  • Add blanched beans and carrot, chilli ginger paste, pepper powder & salt required… saute well while combining
  • Now add Soya sauce and cooked rice…. mix everything well & do check for the salt, remove from the fire
  • Fried rice is ready to serve
