Fried rice|

A rice preparation which is most favourite to my both sons. While preparing fried rice I transform it according to our tastes and preferences, So only product which is used similar to Chinese is soya sauce.
Otherwise I use home made green chilli paste in place of green chilli sauce & use ginger for that extra flavour & pepper powder as usual. Its a tasty, different rice preparation which suits lunch box as well.
Ingredient : measuring cup used – 250 ml
- Cooked rice – 2 cups
- vegetables cut into long –
- Onion – 1/4 cup
- Carrot – 1/4 cup
- Capsicum – 1/4 cup
- French beans – 1/4 cup
- Cabbage – 1/4 cup
- Green chilli – 4 nos., or as per taste (Actually I wanted it spicy , so I have put four)
- Ginger – 1″ piece
- Oil – 1 tbsp
- Cumin seeds – 1 tsp
- Pepper Powder – 1/2 tsp
- Soya sauce – 1 tbsp
- Salt to taste
PROCEDURE :
- Blanch French beans and carrot (Briefly boil) and Keep it aside
- Grind green chilli & ginger to make fine paste
- Heat Oil in a pan, add cumin seeds… when it splutter, add onion, capsicum and cabbage saute continuously for few minutes on medium high flame
- Add blanched beans and carrot, chilli ginger paste, pepper powder & salt required… saute well while combining
- Now add Soya sauce and cooked rice…. mix everything well & do check for the salt, remove from the fire
- Fried rice is ready to serve
