BROWN RICE (organic) SET DOSA/DOSAY & KHALI DOSA/DOSAY/ಬ್ರೌನ್ ಅಕ್ಕಿಯ (ಸಾವಯವ) ಸೆಟ್ ದೋಸೆ ಮತ್ತು ಖಾಲಿ ದೋಸೆ

During my recent visit to Bangalore, I learnt from a waiter in the restaurant, about the difference between Plain Dosay and Khali dosay, (as both these kinds are very famous among bengaluru people) So as per the info, Khali dosay is made using the set dosay batter, which turns out to be thick, spongy and light …. Whereas the Plain dosay is made using the masala dosay batter, which instead turns out to be thin, crisp and of melt in mouth structure. And by now you all know me right (ha ha ha) I wanted to try making Khali dosay using set dosay batter and I thought of preparing the batter by using red rice ie …Rajamudi rice instead of brown rice. Did so and the result is nothing but happiness !! You can just check below at end of this post.
A healthy, gluten free breakfast which is also suitable for people with diabetes if they are finding it difficult to skip the rice in their diet. Just need to replace white rice with brown rice and that too if it is an organic product… then it’s like icing on the cake or sone pe suhaga.
Brown rice is a nutty, earthy flavored highly nutritious whole grain food which contains high fiber, low calorie and gluten free, there by making it an ideal replacement for white rice which contains high carbohydrate.
But brown rice is still a member of the grain family and therefore does contribute to the small amount of carbohydrate, so be sure to account for them properly to reduce the impact on your blood sugar level.

Ingredients : measuring cup used – 250 ml
- Organic brown rice – 2 cups (I have used sona masoori)
- Urad dal – 1 cup
- Sago/sabbakki – 1/2 cup
- Red rice flakes – 1/4 cup
- Salt to taste
- Oil/ghee to smear
PROCEDURE :
- Rinse & soak all the ingredients except salt for about 6 to 7 hrs.
- Drain all the water and grind into a smooth batter using required amount of water
- Transfer, cover and allow it to ferment for 8 hrs or overnight
- While making this dosay/dosa , don’t spread the batter with ladle, rather just pour one ladle full of batter on the hot tawa and shake the tawa lightly. Smear oil/ghee on it and cook on both the sides
- Serve with Sagu/chutney
Below you can check the pics of Khali dosay, batter is same as of set dosay. Just replaced the brown rice with Rajamudi red rice, rest followed the same. You can put any kind of rice of your choice.
