CARROT LENTIL PAYASA/KHEER

We make both lentil payasa and carrot payasa separately right ? But today I have mixed them both and made a new kind of payasa and named it as carrot lentil payasa. The word payasa (Kannada) translates to Kheer. And the lentil used in this recipe is split green gram/moong dal/hesaru bele. Actually my sis-in-law Kalpana Srinivas provided me with this recipe. I’m not aware of it’s original/basic source. She has given me this recipe long back and I tried making it today. This is very delicious…too yummy. We can make this payasa using either winter (red) carrot or Orange one and Instead of using dairy milk, we can use coconut milk or equal quantity of both. Sugar has been used in the original recipe, But here I have used jaggery.

Ingredients : measuring cup used is of 250 ml
- Split green gram/moong dal/hesaru bele – 1/4 cup
- Water – 1 cup
- Grated carrot – 1/2 (very tightly packed)
- Jaggery – 3/4 cup
- Water – 1/4 cup
- Milk – 1 cup
Others :
- Ghee – 2 tsp (I have used this much, use as per choice)
- Broken cashew nuts – 2 tbsp
- Raisins – 1&1/2 tbsp
- Cloves – 4 nos.,
- Saffron strands – 1/4 tsp
- Cardamom powder – 1/8 tsp
PROCEDURE :
- Cook split green gram/moong dal/hesaru bele in 1 cup of water (I cook it in an open vessel)
- Dissolve jaggery using 1/4 cup of water, no need to thicken it, just dissolve to remove the impurities
- Soak saffron in the milk
- Heat ghee in a pan, add in cashew nuts, raisins, cloves n roast them, then add in grated carrot and roast till it releases nice aroma and turns soft (do not burn)
- Add in strained jaggery syrup cook for a minute, then add in cooked lentil/dal/bele
- Stir well while combining everything continuously on high heat for 2 minutes, turn the heat to low, cover and cook it while stirring in between
- Remove from the heat when it becomes thick
- Add in cardamom powder and saffron mixed milk and give it a mix
- Serve hot
