Anytime, anything that too…. when it comes to masala powders, nothing tastes and feels fresh than home made one! and I have been inculcated with this habit of home made things since my birth by my mom, both the grand mothers and after marriage also nothing has changed because even my mother in law was very particular in this matter.

So never ever bought any masala powders from outside. So now staying since very long time in northern India (Agra, Gurgaon), I do prepare dishes like chole, rajma, kadhi, dal makhani etc often and I don’t like to use store bought masala powders for these dishes as well, though I’m not very well aware of making them.

But long back what I did is I clicked the ingredients list mentioned on the ready made packet and started making them at home by guessing the quantities, made some errors and corrections many a times and also inquired and gathered some information with my neighbours as well. So in this way I succeeded in making them at home.

  • Coriander seeds – 1/2 cup (heaped)
  • Cumin seeds – 1/3 cup
  • Carom seeds – 1/2 tbsp
  • Whole red chilies – 15 nos., (byadigi – less hot and gives out good color)
  • Ginger powder – 1/4 cup
  • Bay leaves – 2 tbsp (crush some bay leaves in the mixie coarsely)
  • Black cardamom – 20 nos.,
  • Cloves – 1 tsp
  • Mace – 1&1/2 tbsp
  • Nutmeg – 1 Piece
  • Pomegranate seeds powder – 1/4 cup
  • Dry mango powder – 1/4 cup
  • Gather pomegranate seeds and dry mango powder in a mixie jar
  • Dry roast all the other ingredients separately, allow them to cool
  • Put into the same jar consisting of anar & amchur powder and grind everything into a fine powder
  • Cool completely and store in a air tight jar, use as and when required
