This is the recipe of an instant version of preparing saarina pudi/rasam powder, which very recently I tried making few times for the immediate use in smaller quantity.

You can make this as and when needed and immediately use it. Actually When I made this for the first time, I had put all the ingredients according to the eye measurement, but to post it here I measured all of them and clicked the pics as well

And it is such a useful, apt, quick solution for making saaru/rasam, for reasons like when you are running out of stock of the saaru powder or you don’t have enough time to make it in large quantity or when you don’t have enough quantity of stuffs to make it in large quantity

Though I have mentioned the small quantity of ingredients below, you can keep/store this for up to 1 month under normal weather conditions or during winter. So you can quickly make another batch as and when you need it again.

However the special kind of Powder here is multipurpose lentil powder, which is made using Pigeon peas and can be put into use in various forms of curries, gojju, huli etc.

Ingredients : measuring cup used – 250 ml, yields exactly 1 cup of powder
  • Coriander seeds – 1/4 cup
  • Cumin seeds – 1 tbsp
  • Black pepper corns – heaped 1/2 tbsp
  • Fenugreek seeds – heaped 1 tsp
  • Mustard seeds – 1 tsp
  • Byadigi red chili (which gives out good color, but less spicy) – 25 nos., (bigger ones)
  • Hing – 1/4 tsp
  • Turmeric powder – 1/2 tsp
  • Curry leaves – 1 tbsp/2 strings
PROCEDURE :
  • Sun dry or dry roast only whole red chilies & fenugreek seeds (if you want you can dry roast all the ingredients too)
  • Gather all the other ingredients in a mixie jar along with red chilies and fenugreek seeds, powder them coarsely
