Saaru is a soothing south Indian lentil preparation, made in very thin consisitency, which aids in digestion and also includes many medicinal properties in it. This works good for cough & cold, also saaru can be consumed in the form of soup as well.

Here the word ‘ tili ‘ translates to thin lentil stock and ‘ saaru ‘ translates to very thin lentil soup like dish and here the lentil stock is obtained by cooking small quantity of lentil in lots of water, Different regions in Karnataka prepares different type of saaru and mine is the authentic Malenadu (western Ghats of Karnataka) style saaru powder.

This powder contains cumin seeds, black pepper corns, fenugreek seeds, coriander seeds, curry leaves, mustard seeds, turmeric and couple of more herbs in certain quantity which are roasted and blended together

Saaru (rasam) is prepared by adding small quantity of a popular lentil ie cooked split pigeon peas/arahar dal/togaribele along with considerably more water to get very thin consistency. No vegetables are put in it.

Saaru is also prepared using pulses like horse gram, black eyed beans, brown chickpeas etc. In which the stock (water in which pulses are cooked) is transformed into saaru and pulses are transformed into usli/salad

But of late a small quantity of chopped vegetables are put into saaru.   • Coriander seeds – 1 ½ cups
  • Cumin seeds – 6 tbsp
  • Fenugreek seeds – 2&3/4 tbsp
  • Mustard seeds – 4 tsp
  • Black pepper corn – 4 tbsp
  • Red chilli – Byadigi – 100 gms , Guntur – 25 gms
  • Asafoetida – 1/2 tsp
  • Curry leaves – 1 cup (loosely packed)
  • Turmeric – 1 tbsp
  • Roast all the above ingredients one by one on a medium flame
  • Use few drops of oil while roasting red chilies
  • Let it cool completely…. Then powder it
  • Store in a air tight container
