INSTANT RAVE UPPITTU/RAVA UPMA MIX…3 varieties-home made

Home made, double roasted rava upma mix, explained in detail with step wise pics, which can be cooked instantly in not more than two minutes. Just boil the water, add salt, ghee and ready mix and you’ll be ready with steaming hot upma in no time. A very useful, helpful recipe for the people staying away from home like bachelors, students. Very easy to carry while travelling as well. I have made/tried out this mix in three different varieties ie… Plain upma mix, methi upma mix and masala upma mix, using 1/2 kg semolina/rava for each variety. All the three varieties can be made as such or can be turned into vegetable upma by adding cooked/sauteed vegetable/s of your choice.
Ingredients : measuring cup used – 250 ml
For plain upma mix :
- Rava/semolina/sooji/rave – 1/2 kg (I have used Rajdhani sooji)
- Oil – 2 tbsp
- Mustard seeds – 1 tsp
- Kadalebele/split bengal gram/chana dal – 1&1/4 tbsp
- Uddina bele/split black gram/urad dal – 1 tbsp
- Green chili, chopped – 1 tbsp
- Coriander leaves, chopped – 1 tbsp
- Curry leaves, chopped – 1 tbsp
For methi upma mix :
- menthya soppu/fenugreek leaves/methi – 1/2 cup (along with the above mentioned ingredients for plain upma mix)
For masala upma mix :
- Broken cashew nuts – 1/3 cup
- Turmeric powder – 1 tsp
- Kharabath/uppittu masala powder – 2 tbsp (along with the above mentioned ingredients for plain upma mix)
PROCEDURE :
- To begin with, dry roast the semolina/sooji/rave/rava continuously, until raw smell vanishes, it releases nice aroma and slightly turns to golden color on medium heat
- Heat oil in a pan/kadai, add in mustard seeds, split bengal gram, split black gram fry until they light brown
- Now add in curry leaves, green chilies and coriander leaves and saute for a minute or two
NOW :
- If you are making plain upma mix, then add in roasted rava into this prepared tempering and roast further for up to 4 to 5 minutes on low medium heat
- Remove from the heat, allow it to cool completely and then store in a jar, use as and when required
OR
- If you are making methi upma mix, then add in the chopped methi into this prepared tempering and saute it for 2 to 3 minutes and then add in roasted rava and continue roasting for 4 to 5 minutes more
- Remove from the heat, allow it to cool completely and then store in a jar, use as and when required
OR
- If you are making masala upma mix, then add in the cashew nuts into this prepared tempering and fry the them, then add in the Kharabath/uppittu masala powder and the turmeric powder, combine everything well and then add in roasted rava and continue roasting for 4 to 5 minutes more
- Remove from the heat, allow it to cool completely and then store in a jar, use as and when required
NOTE :
- Please note that I have not added salt to the instant mix
- If you are using any kind of vegetable, then first cook/saute/roast the vegetables then proceed with the recipe
- The upma stays good even after cooled
- You can add grated ginger, some more chilies or red chili power, lemon juice, grated fresh coconut, little sugar etc if you wish
HOW TO MAKE UPMA :
- Instant upma mix – 1 cup
- Water – 2&1/2 cup
- Ghee – 1/2 tbsp
- Salt to taste ( I have used 1&1/4 tsp)
Boil the water (add sauteed/cooked vegetable if using), add salt & ghee, when it starts boiling again rapidly, turn the heat to low, slowly add in the instant rava mix, cover and allow it to cook, remove from the heat and serve
