Yet another addition to my masala powders category. Freshly roasted and ground dal makhni masala powder. I have mentioned the ingredients in very small quantity, because these kinds of masala powders releases nice aroma when freshly ground/made whenever necessary.

Quantity/measurement of ingredients mentioned below is purely based on my guess and I felt it was perfect, but you can adjust if feel like so.

Ingredients : servings – approximately enough for 3 times

  • Coriander seeds – 1 tbsp
  • Whole red chili (byadigi)(less spicy n which enhances the color) – 4
  • Tamarind – 1 tsp (amchur powder can be used here)
  • Black pepper corn – 1/2 tsp
  • Bay leaf – 1 medium sized
  • Mace – 1 tsp
  • Nutmeg – 1/4 tsp
  • Dried ginger – an 1/2 inch piece
  • Star anise – 1 (big)
  • Cinnamon stick – 1/2 an inch piece (nip)(later I added 1/4 tsp of cinnamon powder before grinding)
  • Hing – 1/8 tsp

PROCEDURE :

  • Dry roast all the ingredients, no need to roast them till light brown, just warm them for a minute or so, let it cool, then grind into fine powder. Use as and when required
